como \u00abglaseo\u00bb que permite la formaci\u00f3n de una pel\u00edcula de agua que evita la oxidaci\u00f3n y p\u00e9rdida de calidad durante el almacenamiento frigor\u00edfico. En seguida tenemos el secado en t\u00fanel de aire forzado, a una temperatura entre los -24 y -26\u00baC. Por fin, el pescado es empacado teniendo en cuenta las indicaciones del cliente y utilizando siempre materiales inocuos para la salud
